Chef Mia's Hoomus

Serves 8 as an appetizer. Prep time 20 minutes.

Ingredients:

  • 1 small can of chick peas

  • 1⁄4 cup tahini

  • Juice of 2 lemons

  • 1 tsp. Toasted sesame oil

  • 1 clove of garlic

  • 2 scallions, white & green parts separated

  • 1⁄2 tsp. Cumin

  • 1⁄4 tsp. Allspice

  • 1⁄4 tsp. Black pepper

  • 1⁄4 tsp. Fennel seed

  • 1 tsp. Salt

  • EVOO, chopped scallion greens, and Aleppo pepper to garnish

Method of Preparation:

1. Put all ingredients up except for garnish in food processor. Pulse until well mixed but not yet creamy. Add water if needed to get the right consistency

2. Taste and adjust seasonings and lemon to your own taste.

3. Place in a bowl; drizzle with EVOO and sprinkle with Aleppo pepper and chopped scallion greens.

Tips

Do not hesitate to experiment with the seasonings, lemon, tahini, and sesame oil to get this to your own taste.
