Minestrone Soup

As the days get shorter and the weather gets cooler, it is time to bring out the Crock-Pot! This fall, Root has partnered with Three Sisters Garden and Acord Food Pantry to pilot a Crock-Pot meal kit program for Acord clients. With the support of a generous donor, 35 households received a Crock-Pot. Each week this fall, the Root kitchen team will use fresh produce from Three Sisters to build healthy meal kits for soups and stews that families can cook at home.

This weeks meal kit included all the fixings for Minestrone soup; we look forward to sharing more of these hearty recipes with you this fall!

Ingredients:

  • 1 cup diced tomatoes

  • 3 cups chicken broth

  • 1 cup dried white beans

  • 1-2 Italian sausage links

  • 1 cup dried pasta

  • 1 cup mixed vegetables (celery, onions, carrots)

  • 1 tbs dried oregano

  • 1 tbs salt (optional)

  • parmesan cheese (to garnish)

Ingredients:

  1. Place tomatoes, broth, and beans in the slow cooker

  2. Cook on high for 3 hours until the beans are soft

  3. Dice sausage and add with pasta and vegetables

  4. Cook on high for 30 minutes, or until sausage is cooked through

  5. Add oregano, salt and garnish with cheese
