Coffee Spice Rub

Our June Youth Led Dinner featured a fragrant, spiced lamb with spring peas, roasted onions and celery root puree as one of the entrees. This coffee spice rub pairs well with lamb, beef, pork, or chicken and is a great recipe to try, whether you are grilling, smoking, or pan-searing. Coffee Spice Rub

Ingredients:

  • 1-1/2 ounces finely ground dark roast coffee

  • 2 oz brown sugar

  • 1-1/2 oz kosher salt

  • 1 oz smoked paprika

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp black pepper

  • 1/2 tsp fennel seed

  • 1 whole cinnamon stick

  • 1/4 tsp star anise powder

  • 1 clove

Method of Preparation:

Mise en place: read your recipe, gather all ingredients and tools, measure, then start preparing.

  1. Toast the whole spices in a dry pan over medium heat until fragrant. (fennel seed, star anise, peppercorn, clove & cinnamon.) Set aside to cool.

  2. Grind the whole spices to a fine powder, sift out any husks that don’t grind down.

  3. In a bowl, combine the coffee, brown sugar, salt, smoked paprika, garlic powder, onion powder and black pepper with the ground spices. Break up any sugar clumps.

  4. Store in an airtight container away from light.

  5. Use within 1 month.
