Root's youth training program - intensive culinary work and life skills preparation with direct externship experience - helps ready them for future success.

Amuse: cauliflower bisque kissed with cocoa powder and cinnamon
Kale Salad: shaved fennel, pickled onions, prosciutto, peeled pecorino, poached figs

Moroccan Spiced Grilled Lamb Chops, caramelized Brussels sprouts, confit fingerling potatoes or
Seared Wild Salmon, with brandade cannelloni, warm tomato coulis, charred broccoli or
Ceci Crepe, curry mascarpone, wilted spinach, braised king oyster mushrooms, toasted wheat berries with currants
